I made chicken quesadillas for dinner the other night and they were pretty good. I say pretty good because I imagined them tasting a bit different but my husband said he liked them a lot and he never likes anything "a lot" so a point for me. Anyways, here's the easy recipe!
4 cooked chicken strips* (boiled or baked)
8 soft shell flour tortillas
1/2 cup of shredded spinach
1 bag of Mexican blend cheese (or whatever combination you like)
1 cup of Taco Bell Spicy Ranchero sauce (or whatever flavor you prefer)
While the chicken cooked, I placed the sauce into a small bowl for mixing later and shredded the spinach. I placed 4 of the 8 tortillas shells on a pizza sheet pan and pre-heated the oven at 350 degrees. Once the chicken was done, I cut the chicken into little bits and put them into the small mixing bowl and tossed until sauce evenly coated the chicken. I then took some sprinkle of cheese and put a thin layer down onto the tortillas, then spread some spinach, then the chicken, and then another layer of cheese. I covered them with the rest of the tortillas and placed into the oven for about 5 minutes. Cut and serve while warm! :)
