Coconut Banana Pancakes
Ingredients:
- 1 banana
- 2 eggs
- 2 tsp vanilla extract
- 1/4 cup coconut flakes
Directions:
- Heat stove to medium-low heat and spray pan with non-stick cooking spray or lite butter.
- Blend all ingredients until smooth. (This is important because your pancakes will not come out smooth and fluffy!)
- Pour batter into pan and let sit for about 15-20 seconds on each side or until flip-able.
- Stack on to plate then let cool for a minute.
- Add a spoon of whipped cream and coconut flakes on top.
- Enjoy!
I am so into food photography! It's my new addiction! It is so fun to set up little food shoots and then get to eat my creations afterwards. Worth. But seriously guys, you should know by now, how good these pancakes are. They are extremely healthy for you and for an entire stack of pancakes under 300 calories, come on! Make them and have fun experimenting with flavors! :)
