Mini Oatmeal Breakfast "Cakes"



I have developed a love for food photography.  I'm a total foodie and I'm a photographer.  Why not mix the two to make some interesting recipe posts and share my love for food?

Mini Oatmeal Breakfast "Cakes"
Yields 6-12 (highly dependable on what kind of pan you use, how thick you want them, etc)



      Ingredients

      Batter Base:
  • 1 ripe banana
  • 1/2 cup steel cut oats
  • 1/3 cup almond milk unsweetened
  • 2 tsp vanilla extract
      Directions
  1. Preheat oven to 350 degrees F
  2. Add the ingredients into blender and mix until smooth without any chunks
  3. Add batter into pan ( I used a cute heart shaped baking pan that yielded 6 treats.  If using a 12-cupcake pan, double the recipe!)
  4. **
  5. Once you have added any other ingredients, place into oven for about 5-8 minutes depending on how oatmeal-y you want them to be.  I kept mine baking for 8 minutes because I wanted them to be more solid for on the go treats!
  6. Let cool, then enjoy!


**Once I  added the batter to the pan, I spiced it up by making different flavors!  I added some blueberries to some and chocolate chips to others but I really liked these 3 flavors I made:

For Cinnamon Roll:
Add 1 tsp of cinnamon and chopped walnuts into each hole and mix into batter.
After it is done baking and has cooled, add a cream cheese frosting.

For Apple Pie:
Add 1 tsp of cinnamon to each hole.  Mix well.
Slice two thin apple slices and place lightly on top of batter.

For Coconut Banana Creme Pie: (my favorite out of the bunch!)
Add shredded sweetened coconut to each hole and mix well.
Once it has baked and cooled, spoon some whip cream on top, add a banana slice on top and sprinkle some crushed vanilla wafer on top and enjoy!






They can also make for healthy treats for family and friends!
