Pre-workout Breakfast: Banana Blueberry Oat "Pancakes"

I have been changing my lifestyle and it is a slow process but I am staying motivated and committed to getting into shape and making healthier eating choices.  The best thing to do before a workout (I've read) is to eat a good fueling meal and yes, good carbs are okay.

For these fruit oatmeal "pancakes", I used:

1 medium banana
1/2 cup blueberries
1/3 cup steel cut oats
1 tbsp of unsweetened vanilla almond milk


In a blender, I placed the banana and blueberries and blended until smooth.  I then added the oats and almond milk to mixture and blended until well mixed.  I put my oven on medium heat and poured the mixture into "pancake position" and let brown on each side for about 1-2 minutes depending on thickness.

To negate the sweetness, I put a little bit of light butter on top.
