Simple Chicken Kale Salad

Dinner tonight was a "him & her" dinner.  My husband wanted chicken quesadillas so I threw some simple ingredients together with some of the chicken on a whim and made a healthy yet tasty chicken kale salad.  Seriously ya'll, it was amazing.  I took myself by surprise that's how good it tasted!


    Ingredients: 

  • two skinless/boneless chicken tenderloins
  • 1 cup of ripped kale
  • 1 lemon or lemon juice
  • pinch of black pepper
  • 1 tbsp of olive oil
  • sprinkle of part-skim mozzarella cheese


     Directions:
  1. fill a small pot with enough water to cover the chicken and bring to a boil.
  2. boil chicken for about 15-20 minutes depending on thickness
  3. once you have checked the chicken to make sure it is fully cooked, cut into pieces.
  4. heat a small pan on medium-low heat and pour the olive oil into pan along with the chicken, mix for about 30 seconds.
  5. add kale, black pepper, and a squeeze of lemon juice into pan, mix well, then place lid over pan and let it heat for about 2 minutes until kale is steamed.
  6. pour onto plate, and immediately add mozzarella cheese so it can slightly melt.
