Ingredients:
- two skinless/boneless chicken tenderloins
- 1 cup of ripped kale
- 1 lemon or lemon juice
- pinch of black pepper
- 1 tbsp of olive oil
- sprinkle of part-skim mozzarella cheese
Directions:
- fill a small pot with enough water to cover the chicken and bring to a boil.
- boil chicken for about 15-20 minutes depending on thickness
- once you have checked the chicken to make sure it is fully cooked, cut into pieces.
- heat a small pan on medium-low heat and pour the olive oil into pan along with the chicken, mix for about 30 seconds.
- add kale, black pepper, and a squeeze of lemon juice into pan, mix well, then place lid over pan and let it heat for about 2 minutes until kale is steamed.
- pour onto plate, and immediately add mozzarella cheese so it can slightly melt.
