Cinnamon Bun Cookies with Cream Cheese Frosting


Warm cinnamon cookies.  Sweet cream cheese.  Amazing.  While I was making these cookies, things did not turn out the way they were supposed to.  I was discouraged.  I made them into drop cookies instead of the original rolled/cut cookies and they came out amazing.  They are perfect for the holidays.  I recently made these for my husband's work thanksgiving potluck and let's just say, the container was empty by the end of it.  I even heard someone say that they were really good.  Yes, I am proud.  :)

Cinnamon Bun Cookies                         

    Ingredients:

  • 1 & 3/4 cups all-purpose flour                                      
  • 1 tsp baking soda                                                         
  • 1/4 tsp salt                                                                    
  • 1 & 1/4 cups sugar + 2 tbsp sugar, divided                 
  • 3/4 cup light butter, softened (12 tbsp)                        
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
Cream Cheese Frosting
  • 3 ounces cream cheese, softened
  • 1/3 cup light butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 tbsp milk

     Directions:

  1. Preheat oven to 350 degrees F
  2. Whisk together flour, baking soda, and salt. Set aside.
  3. Beat 1 & 1/4 cups sugar and butter until fluffy. Mix in egg and vanilla.
  4. Gradually add flour mixture to wet ingredients.
  5. Combine the cinnamon and 2 tbsp of sugar, then mix gradually to mixture.
  6. Refrigerate for at least 1 hour.
  7. Take chilled dough and roll into quarter width sized balls.  Place on parchment paper or other non-stick baking sheet.
  8. Bake for about 7 minutes or until bottom is lightly browned.
  9. While cookies are baking, make the cream cheese frosting.  To make frosting, beat soften cream cheese and butter in a bowl until smooth.  Add sugar, milk, and vanilla and again mix until smooth.  Cover and sit in the fridge.
  10. Let cool for about a 2 minutes.
  11. Add cream cheese frosting once cookies have cooled.
