Warm cinnamon cookies. Sweet cream cheese. Amazing. While I was making these cookies, things did not turn out the way they were supposed to. I was discouraged. I made them into drop cookies instead of the original rolled/cut cookies and they came out amazing. They are perfect for the holidays. I recently made these for my husband's work thanksgiving potluck and let's just say, the container was empty by the end of it. I even heard someone say that they were really good. Yes, I am proud. :)
Cinnamon Bun Cookies
Ingredients:
- 1 & 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 & 1/4 cups sugar + 2 tbsp sugar, divided
- 3/4 cup light butter, softened (12 tbsp)
- 1 large egg
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
Cream Cheese Frosting
- 3 ounces cream cheese, softened
- 1/3 cup light butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla
- 1 tbsp milk
Directions:
- Preheat oven to 350 degrees F
- Whisk together flour, baking soda, and salt. Set aside.
- Beat 1 & 1/4 cups sugar and butter until fluffy. Mix in egg and vanilla.
- Gradually add flour mixture to wet ingredients.
- Combine the cinnamon and 2 tbsp of sugar, then mix gradually to mixture.
- Refrigerate for at least 1 hour.
- Take chilled dough and roll into quarter width sized balls. Place on parchment paper or other non-stick baking sheet.
- Bake for about 7 minutes or until bottom is lightly browned.
- While cookies are baking, make the cream cheese frosting. To make frosting, beat soften cream cheese and butter in a bowl until smooth. Add sugar, milk, and vanilla and again mix until smooth. Cover and sit in the fridge.
- Let cool for about a 2 minutes.
- Add cream cheese frosting once cookies have cooled.
