Healthy Flour-less Banana Bread

      ingredients:
  • 2 ripe bananas (the riper, the better)
  • 1 cup of steel cut oats (1/2 cup for blending, 1/2 cup set aside)
  • 1/2 cup almond milk unsweetened
  • 1 tsp of vanilla extract
  • 1 large egg

      directions:
  1. preheat oven to 350 degrees F
  2. blend bananas, making sure it is smooth with no chunks
  3. add 1/2 cup of oats, vanilla extract, the egg, and the almond milk to blender and blend until smooth.
  4. in a bowl, pour blended mixture and add the other 1/2 cup of oats, mixing well.
  5. pour into bread loaf pan and bake for about 15 minutes or until top is lightly browned.

I absolutely loved this "bread".  You can sub 2 bananas for 3 easily for more of a banana taste but the texture may be different.  I will definitely have to bake this again and try different ratios or maybe add some walnuts! Yum!  Enjoy!

I'm currently eating this with a thin layer of peanut butter on top for my pre-workout meal!  Oh my gosh, amazing!
