I am an oatmeal person. It's a comfort food and a healthy one (if you make it so). There are so many ways to flavor it with fruits, nuts, spices, etc. I decided to do a beloved flavor combination, vanilla and almond. This is going to be a healthy recipe mind you. I'm using steel cut oats, so the texture and flavor will be nutty. One bowl will leave you fuller and totally guilt free. This oatmeal was made overnight and then heated and garnished with almonds and syrup. Overnight oats are good and can be served cold.
Vanilla Almond Oatmeal
Ingredients:
- 1/3 cup steel cut oats
- 1 cup almond milk
- 2 tsp of vanilla extract
- 1 tsp cinnamon
- 2 tsp of maple syrup or honey
Directions:
- In a cup or bowl, mix steel cut oats, almond milk, extract, and cinnamon.
- Cover and leave in fridge overnight.
- When ready to eat, heat up in microwave for about 45 seconds.
- Drizzle honey/syrup and garnish with almonds or desired toppings.
If it isn't sweet enough for you, you can add some sugar but me wary of how much you use. I would suggest using at most 1 tbsp.
