Flour-less Peanut Butter Cookies (With Steel Cut Oats)


 I love a good cookie recipe.  Seeing as how this one was a healthier alternative to a tradition peanut butter cookie, I had to try it.  These are filling!  The steel cut oats make it more nutty alongside the peanut butter and you get a nice chewy, crumbly texture.  I am in love!

Flour-less Peanut Butter Cookies
yields: 8-10 cookies

      Ingredients:
  • 1/3 cup steel cut oats(can sub old-fashioned oats)
  • 1/2 tsp baking soda
  • 1/2 cup peanut butter
  • 1 egg
  • 1/4 cup light brown sugar
  • 3/4 tsp vanilla tsp
  • handful dark chocolate chips
     Directions:
  1. Preheat oven to 350 degrees F.  In bowl, mix oats and baking soda.  Set aside.
  2. In a separate bowl, beat egg, peanut butter, and brown sugar until smooth.  Add vanilla extract and mix well.
  3. Stir in dry ingredients into the wet ingredients.  Mix well.  Add chocolate chips or other tasty additional if desired.
  4. Drop cookies onto parchment lined cookie sheet. 
  5. Bake for 9 minutes and then let cool.
