I love a good cookie recipe. Seeing as how this one was a healthier alternative to a tradition peanut butter cookie, I had to try it. These are filling! The steel cut oats make it more nutty alongside the peanut butter and you get a nice chewy, crumbly texture. I am in love!
Flour-less Peanut Butter Cookies
yields: 8-10 cookies
Ingredients:
- 1/3 cup steel cut oats(can sub old-fashioned oats)
- 1/2 tsp baking soda
- 1/2 cup peanut butter
- 1 egg
- 1/4 cup light brown sugar
- 3/4 tsp vanilla tsp
- handful dark chocolate chips
- Preheat oven to 350 degrees F. In bowl, mix oats and baking soda. Set aside.
- In a separate bowl, beat egg, peanut butter, and brown sugar until smooth. Add vanilla extract and mix well.
- Stir in dry ingredients into the wet ingredients. Mix well. Add chocolate chips or other tasty additional if desired.
- Drop cookies onto parchment lined cookie sheet.
- Bake for 9 minutes and then let cool.
