New Years Confetti Cookies



I have finally tried cake mix cookies.  They are so easy and quick to whip up for parties, work, or if you are just craving some sweet thangs.  There are so many different cakes mixes out there, which means more opportunities to bake some good ass cookies.  Seriously.  So here they are!

Cake Mix Confetti Cookies

Ingredients:

  • One box of vanilla cake mix (I used Duncan Hines French Vanilla)
  • 1/3 cup oil (I used light olive oil)
  • 2 eggs
  • sprinkles
  • confectioners sugar (powdered sugar)
Directions:
  1. In a large mixing bowl, combine cake mix, oil, and eggs.  Mix well.
  2. Mix in sprinkles.  At this point you can make your cookies as crazy as you want, but I used about 1 tbsp so that there would be more "cookie" than sprinkles.
  3. Chill dough for at least 15 minutes.  I prepped the cookie dough in the late morning so mine sat in the fridge for quite some time.
  4. Preheat oven to 350 degrees.
  5. Take cookie dough out, set aside while you prep pan.
  6. On a cookie sheet, lay down some parchment paper.  Dust with powdered sugar.
  7. Drop cookie dough by tablespoon or you can roll dough into balls like I did.  If you are rolling, make sure your hands are dusted with sugar as well to avoid sticking.
  8. Bake for 8 minutes (At around 5 minutes, I would start to watch your cookies to avoid over baking)
  9. Let cool and enjoy!
Note*  A lot of people don't like baking with olive oil because they complain of it tasting weird.  Since I used light olive oil, I did not taste anything wrong with the cookies.  I cut some calories and they tasted amazing!  So if you do not have vegetable oil or want to use olive oil, make sure it is LIGHT!
