Whole Wheat and Nut Pancakes




When I found this recipe on the internet (thanks katie at the kitchen door !!) I was excited for two reasons. 1) I could finally use the whole wheat flour I had in my cabinet and 2) because this recipe is so similar to the IHOP Harvest Grain N Nut pancakes that I love so so much. I prepped the dry ingredients the night before so in the morning I hopped right on it and made these bad boys.  Amazing.

I followed the recipe and changed a couple of things.  I cut the recipe in half, replaced the buttermilk with almond milk, removed the almond extract all together, used old fashioned 100% whole wheat oats, and added in some chopped almonds and walnuts.  I made some fresh strawberry "syrup" to top it all off.  With these pancakes, you can easily add fruits when cooking to make it more filling and healthy.

Whole Wheat and Nut Pancakes

Ingredients:
  • 1/2 cup whole wheat flour
  • 1/4 cup old fashioned 100% whole wheat oats
  • 2 tbsp chopped pecans
  • 1 tbsp chopped almonds
  • 1 chopped walnuts
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • pinch of salt
  • 1/2 ripe banana
  • 1/2 egg
  • 3/4 cup almond milk
Directions:
  1. Combine all dry ingredients in a large mixing bowl. 
  2. In a separate bowl, mash banana into a paste.  Beat in egg and milk.
  3. Spray a pan with cooking spray and heat to medium low heat or heat to medium-low heat and melt some butter.
  4. Cook pancake for 3-4 minutes or until top is bubbly and bottom is browned then flip.
  5. Repeat.  **If adding fruits, pour batter into pan and then add fruit to pancake.
  6. Enjoy!


For strawberry syrup, I took a handful of washed strawberries and cut the stems off.  I blended them with a tablespoon of sugar until smooth.  It's tarty but I love it!

These pancakes are a bit of work especially if you're like me and chopped the nuts yourself.  They are totally worth it though and you can enjoy them guilt free.
